About Your Hosts
Sébastien Roy and his mother, Diane Roy, own and operate Fils du Roy Distillery, a small family business located on New Brunswick’s scenic Acadian coast. Sébastien is a master distiller and master brewer, and the Roys take great pleasure in mixing Acadian history with the flavours of their various products. Born from a true passion for spirits tasting and a drive to support the local economy, their business began with an idea during a family reunion. The Roys are now internationally known and aim to offer unique high-quality spirits and craft beers featuring local ingredients at affordable prices.
What We’ll Do
We’ll curate a selection of our finest spirits and craft beers just for you and share the Acadian history and unforgettable stories that have inspired our products. We’ll explore and discuss the ingredients grown on site, foraged in the area, and provided by local farmers (such as the grains we use and the wormwood, hyssop, and lemon balm we harvest for our absinthe), and show you the cellar where our products come to life. Depending on the day of the week, you may even see the alcohol in production.
What We’ll Provide
Stories and spirits you won’t find anywhere else, and placemats designed for note-taking to take home with you.
Where We’ll Be
Located just southwest of Caraquet on the Acadian Peninsula, Fils du Roy Distillery opened in September 2012 as the first distillery in Acadie. From its start, this small artisanal distillery aimed to develop jobs that would remain in the region. Today, the distillery welcomes up to 200 visitors a day in summer which helps contribute to the local economy. This fame has been won in part thanks to the international awards we’ve received, including a recent silver medal for our first single malt whisky at the Canadian Whisky Awards.
